Crab Avocado Appetizer
Ingredients
- 4 ripe avocados
- 2 cups mayonnaise
- 8 ounces fresh all-lump crab meat
- 3 tablespoons fresh squeezed lemon juice
- 2 tablespoons creole mustard sauce
- 1/4 cup fresh grated parmesan cheese
- all purpose seasoning (to taste)
Peel the avocados and cut in half. Remove and discard the seed. Rub them with some of the lemon juice so they do not turn brown. Next, place 2 tablespoons of the lemon juice and the rest of the ingredients in a large mixing bowl and stir until well blended. Taste for seasoning and adjust if necessary. Spoon the mixture in to the avocado halves as needed and garnish with some finely chopped parsley or chives. Serve chilled.
